Turkey Slaw


1 cup plain nonfat yogurt

2 tbsp white wine vinegar

3 tbsp lemon juice

1 tsp curry powder

1 tbsp honey

1 tsp each salt and pepper


6 cups shredded cabbage

1 red pepper diced

5 green onions thinly sliced

1/2 cup chopped walnuts

1 large apple diced and sprinkled with lemon juice to prevent browning

1/2 cup raisins

3 cups shredded turkey (or chicken)

Prepare your dressing and set aside.

Place your raisins in a bowl of hot water and let sit until plump (about 7 min).  Drain and add to a large bowl along with diced apple and shredded leftover turkey.

To the same bowl add the rest of the ingredients and mix well.
