Jojo’s Oatmeal Cookies

1/2 cup butter

1/4 cup canola

1 cup Splenda

1/2 cup brown sugar

1/2 cup white sugar

2 eggs

1 egg white

2 tsp vanilla

1 cup plain yogurt

1/2 cup white flour

1/2 cup ww flour (whole wheat)

1/2 cup oat bran

1/4 cup wheat bran

1/4 cup ground flax

1/4 cup soy flour

1 tsp baking soda

1 tbsp baking powder

2 tsp cinnamon

7 cups large oat

2 cups raisins

Holy cow! that’s a long ingredient list. I didn’t realize it until I typed it out 🙂 Don’t be afraid though, it was made in one big bowl and you can do a lot of substitutions. Add all of one type of flour if you like. You could use all butter. You could use only white and brown sugar. Really simple.

Butter should be at room temperature. In a large bowl combine butter, oil and sugars and blend until well combined. Add 1 egg at a time blending well in between each one. Now your mixture should look creamy. Add 2 tsp vanilla and blend again. One more time add yogurt and blend. In the same bowl add all other ingredients except oats and raisins. Once blended you can now add in the oats and raisins blending only enough to incorporate everything. Feel free to use your hands to gently mix the cookie dough and then grabbing about 1/4 cup at a time with your hands, toss back and forth forming a ball. Once you have all of your cookie balls placed closely together (they won’t spread) you can press them down a bit with wet fingers. Bake at 350 degrees until lightly brown.
