1 tbsp butter

1/2 a white onion finely chopped

4 whole eggs

3 egg whites

3/4 cup skim milk

1/2 tsp salt

1/2 tsp chili powder

2 tsp oregano

1/2 cup feta cheese

1 cup asparagus tips

Combine eggs, egg whites, milk, salt, oregano and chili powder in a bowl and blend well. Melt butter in a large, very hot nonstick frying pan (that can also go in the oven) and cook onion until lightly brown. Pour egg mixture into the pan and turn down the heat. Sprinkle feta over the eggs and then place the asparagus spears in a nice circle.

Place in the oven and bake until firm. I just let the bottom of the Frittata cook a bit on the stove top before baking at 400 degrees.
